Plum and walnut muffins

Muffins are my favorite baking. Easy, quick and versatile. You can make them fruity, chocolaty, or just plain sugar ones, but autumn is perfect for autumn-fruit ones. If you’ve had enough of eating plums on their own, use them in this easy and delish muffins.

Autumn muffin


You will need:
125 g butter
100 g brown sugar (I use unrefined)
2 eggs
300 g pitted plums (softer the better)
few drops of vanilla extract
5 dl milk (if your plums are firm you might need to increase the milk)
1 tbsp baking powder
200 g flower
handful of chopped walnuts


Pre-heat oven to 180 C.
In a bowl mix melted butter, beaten eggs, vanilla extract and milk.
Add to flour, baking powder, sugar and cinnamon, do not over mix.
Add plums and walnuts.
Spoon into cases, I filled mine to the top

Bake for 25 to 30 minutes.
